Pimento cheese spread is a spicy Southern spread made with cheddar cheese and peppers and often used to make quick tea sandwiches or spread on biscuits.
INGREDIENTS:
2 cups shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
½ cup mayonnaise
¼ teaspoon garlic powder
¼ teaspoon ground cayenne pepper
¼ teaspoon onion powder
½ - 1 jalapeno pepper, seeded and minced (optional)*
1 (4 ounce) jar diced pimento, drained
Salt and black pepper to taste
METHOD:
Place the cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, minced jalapeno, and pimento into the mixing bowl of a stand mixer. ** Using paddle attachment, beat at low speed until mixture is thoroughly combined. Season to taste with salt and black pepper.
* Be sure to check jalapeno pepper for heat before adding to spread.
** You can also make the spread in food processor for a lighter 'whipped' and softer spread. Put all ingredients EXCEPT jalapeno and pimento into food processor and process until smooth. Then, stir in remaining peppers.
